Bejad Ki Roti | Rajasthani Famous Multigrain Roti is a protein-rich and tasty roti. It tastes amazing with spicy Lahsun/Garlic chutney. This roti is very famous in Rajasthan. This is very good for summer. Bejad ka atta/flour requires barley/jau, black chickpeas/Kala Chana, soybeans, fenugreek seeds/dana methi, and wheat/gehu. This multigrain roti is extremely nutritious and super tasty. So, try this roti at home and let us know how was it.

Ingredients

  • Bejad Ka Aata (Multigrain flour - Barley, Soybeans, Black Chickpeas, Fenugreek seeds, Wheat) - 1 Cup
  • Salt - as per taste
  • Ghee/Clarified Butter - as required for serving

Instructions

  1. To make Bejad ka atta, mix barley/jau - 2 KG, Black Chickpeas/Kala Chana - 250 Grams, Soy Beans - 250 Grams, Fenugreek seeds/Danamethi - 250 Grams, Wheat/Gehu - 250 Grams. You can flour at home or at the flour mill.
  2. PREPARING THE BEJAD KI ROTI:- Take bejad ka aata in a bowl, add salt. Add water to make soft dough like chapati.
  3. Take a dough ball bigger than the chapati dough. Dust it with flour and roll it to make a bit thicker roti.
  4. Meanwhile, heat a Tawa (you can use mitti ka tawa or iron one)
  5. Once the tawa is hot, cook the roti. When it is cooked a little bit from one side, flip it and cook it from another side.
  6. Cook the roti on direct flame. Then transfer to a plate.
  7. Press it with your hand and pour ghee over it. You can prick it with a spoon so that ghee gets absorbed.
  8. Delicious 'Bejad Ki Roti' is ready to be served with Lahsun Ki Chutney.

 

HOW TO STORE:

It is advised to consume within 30 days of milling, or its nutritional value depletes. So, buy in small quantities and finish it in time. Store in refrigerator for longer shelf life.
